The “Educational vegetable garden” project reports on the experience of implementing a vegetable garden at the Gilberto Rola State School, located in the rural community of Maísa, in Mossoró, with the aim of promoting environmental, food, and social education. The initiative combines theory and practice in cultivation, emphasizing principles of sustainability, health, and citizenship. The choice of vegetable species prioritized vegetables widely consumed in everyday life, including chives, arugula, coriander, carrots, green lettuce, red lettuce, bell peppers and beets. During cultivation, sustainable techniques were applied, such as composting, organic fertilization and natural pest control, encouraging conscious consumption, autonomy, teamwork and respect for the environment. The implementation of the vegetable garden provided theoretical and practical learning about food production, sustainable management and natural fertilization. Moreover, it stimulated creativity, strengthened collaborative work, promoted healthy eating habits, and reinforced social and environmental responsibility, contributing to the development of more conscious citizens committed to sustainability.
